Zero Miles Water

For a few years now, high-end hotels, cruise ships, and restaurants, both in Europe and the United States, have decided to include it in their menu. This is the case of Martin Berasategui, the famous Spanish chef with a three-star Michelin, or the Atera, in New York, with two Michelin stars.

What’s it all about?
The purified water supply system takes advantage of the nearest and most economical water source, that of the public water service. It submits it to a meticulous process of micro-filtering and/or reverse osmosis, to remove it of lime, microorganisms, contaminants and unnecessary salts.
The result, in addition to healthy water, is pure, refreshing, delicious water, free of strange smells and tastes.
Zero Miles Water: An eco-friendly system
Contrary to the bottled water production process, the “in situ” purified water system is a totally ecological method.
Bottled water production requires large amounts of energy and generates piles of plastic waste. In addition, the water must be transported: From the spring or extraction site to the bottling plant, and from there to the sale points. And many times, from the other sides of the world. Transport requires trucks, ships, and aircraft, which, as is well known, involve CO2 emissions.
In the United States alone, 19 billion barrels of fuel is spent transporting bottled water from one place to another.
On the other hand, the “in situ” purified water system does not require transportation, as it runs continuously in the public water network. This avoids CO2 emissions and significantly reduces the carbon footprint.
Recently, Regent cruise services hired a purified water system for their passenger ships; and announced that thanks to this new supply method will eliminate about two million plastic bottles a year.
Benefits
The “in situ” purified water system costs just a few hundred dollars per month. The restaurant doesn’t have to worry about anything: The contractor company does the installation, the maintenance, the sanitization; and also offers 24/7 technical assistance.
The package includes the design, personalization and bottle supply, in which the restaurant will serve the water for its customers. This design is exclusive for each restaurant that hires the service.
For restaurants, one of the greatest advantages of having a purified water system is that they no longer need to invest space and effort in handling, storing and recycling thousands of water bottles. Bottles with exclusive design can be reused up to three thousand times.
Profitability
In a restaurant, about 85% of customers order filtered water. Just 15% prefer bottled water. Percentages a reflection of costs: between 3 and 5 dollars per water bottle.
This opens up a wide market for filtered and purified water. For every 100 diners, 85 will be willing to try filtered water and pay for purified water, if the price were lower than the conventional bottled water.
Since the same bottle can be reused, practically unlimited, it’s perfectly possible to offer the bottle of purified water for 1 dollar, which would make it attractive for this large market of diners.
However, some restaurants have decided to provide their customers with filtered water at no cost.
